10 cups air-popped popcorn
1 cup brown sugar
1/4 cup corn syrup
1/2 cup unsalted butter
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
Pop the popcorn and spread it out on a large parchment-lined baking sheet. Remove any unpopped kernels.
In a saucepan, combine brown sugar, butter, corn syrup, and salt. Bring to a boil and simmer for 4–5 minutes.
Remove from heat and stir in baking soda and vanilla. It will foam up.
Quickly pour caramel over popcorn and stir to coat evenly.
Bake at 250°F (120°C) for 45 minutes, stirring every 15 minutes. Let cool completely before storing.
