  • 1 lb fresh mushrooms (button or cremini), sliced

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 3 cups vegetable or chicken broth

  • ½ cup heavy cream (optional)

  • 2 tbsp butter or olive oil

  • Salt and pepper to taste

Instructions

  • In a large pot, heat butter or oil over medium heat. Add onions and garlic; sauté until fragrant.

  • Add sliced mushrooms and cook until browned and tender.

  • Pour in broth, scraping the pot bottom. Bring to a simmer for 15–20 minutes.

  • Blend all or part of the soup for desired texture.
