Peanut Butter Pumpkins – Easy No-Bake Fall Dessert

These Peanut Butter Pumpkins are an easy, no-bake fall treat! 🎃🥜 With a creamy peanut butter filling coated in smooth chocolate, they’re the perfect Halloween or Thanksgiving dessert. No baking required, just mix, shape, and dip!

Ingredients

For the Peanut Butter Filling:

1 cup peanut butter (creamy or crunchy)
½ cup powdered sugar
¼ teaspoon cinnamon (optional, for warmth)
¼ teaspoon pumpkin spice (for a seasonal touch)
1 teaspoon vanilla extract

For the Coating:

1 ½ cups melted chocolate (milk, dark, or white chocolate)
¼ teaspoon coconut oil (for a smooth chocolate coating)

Optional Garnishes:

Crushed peanuts for added crunch
Drizzle of white chocolate for decoration
Sea salt flakes to enhance flavor


Instructions

1️⃣ Mix the Peanut Butter Filling

  • In a medium bowl, mix peanut butter, powdered sugar, cinnamon, pumpkin spice, and vanilla extract until smooth.
  • If the mixture is too soft, refrigerate for 10 minutes.

2️⃣ Shape the Pumpkins

  • Scoop small portions of the peanut butter mixture and roll into pumpkin-like shapes.
  • Use a butter knife or toothpick to create pumpkin ridges.
  • Place on a parchment-lined baking sheet and freeze for 20-30 minutes until firm.

3️⃣ Melt the Chocolate Coating

  • In a microwave-safe bowl, melt chocolate and coconut oil in 20-second intervals, stirring until smooth.

4️⃣ Dip & Coat the Pumpkins

  • Using a fork or toothpick, dip each peanut butter pumpkin into the melted chocolate.
  • Let excess chocolate drip off before placing back on parchment paper.

5️⃣ Decorate & Set

  • While the chocolate is still wet, sprinkle with crushed peanuts, white chocolate drizzle, or sea salt flakes.
  • Let the pumpkins set in the refrigerator for 30 minutes until firm.
