Ingredients

Scale

For the Crust:

  • 2 cups graham cracker crumbs

  • ½ cup melted butter

  • ¼ cup granulated sugar

For the Filling:

  • 1 can (12 oz) evaporated milk, well chilled

  • 1 package (3 oz) lemon Jell-O gelatin

  • 1 cup boiling water

  • 8 oz cream cheese, softened

  • 1 cup granulated sugar

  • 2 tbsp fresh lemon juice

Instructions

  1. Dissolve lemon gelatin in boiling water. Let cool slightly.

  2. In a large bowl, beat softened cream cheese, sugar, and lemon juice until smooth. Add cooled gelatin and blend.

  3. In a separate chilled bowl, whip evaporated milk until stiff peaks form.

  4. Gently fold whipped milk into the cream cheese mixture.

  5. Combine graham cracker crumbs, butter, and sugar. Press most into a 9×13-inch pan, saving some crumbs for topping.

  6. Pour filling over crust, smooth the top, and sprinkle with reserved crumbs.

  7. Chill 4–6 hours, or overnight, before slicing and serving.

Notes

  • For extra flavor, use lemon zest in the filling.

  • To change it up, try orange or raspberry Jell-O instead of lemon.

  • Chill evaporated milk overnight for best whipping results.
